Класацията Мишлен датира от 1900 г. Първоначално е фокусирана върху практичната информация – на пътна карта къде има места за спиране за гориво. Постепенно идеята еволюираха до червените книги със списъци на ресторанти с хубава храна. През 2021 г. ръководствата Мишлен станаха изцяло в цифров формат.
